This recipe features a mixture of tomatoes, bell peppers, onions, and garlic simmered together with pockets of gently poached eggs. While it may look complicated, you can make a restaurant-quality version at home in a few simple steps.

– 3 tablespoons olive oil
– 1 large onion diced
– 1 large red bell pepper diced
– 4 garlic cloves grated
– 1 tablespoon paprika
– 2 teaspoons ground cumin
– 1 teaspoon chili powder
– ½ teaspoon kosher salt
– ½ teaspoon ground black pepper
– 1 can whole peeled tomatoes (28-ounce)
– ¼ cup cilantro or parsley plus more for garnish
– 6 large eggs
