Mexican Speciality: Beef Enchiladas

Ingredients:

– 1 lb ground beef
– 2 13oz can enchilada sauce or 1 big can
– tortillas
– Shredded cheese
– 4 oz cream cheese

Directions:

Cook beef until done. Add a 3/4 cup sauce to cooked beef. Add about a cup of cheese into the beef mixture. Fill the tortilla shells with mixture and place in 13×9. With remaining sauce, place in fry pan and add the cream cheese. Cook until blended. Pour over top of the rolled enchiladas. Sprinkle shredded cheese on top. Bake at 350 for 20-30 minutes or until cheese is melted and the middle is warm.
