Ingredients:
•200g cucumber, chopped, plus 2 slices to serve
• 150ml 100% agave tequila
• 75ml Cointreau
• Juice of 2 lemons
• Juice of 2 limes
• 75ml sugar syrup
• A handful of ice, plus extra to serve
• 1 tbsp sea salt
Put the cucumber, tequila, Cointreau, lemon and lime juice, sugar syrup and ice in a blender and whizz until well combined. Put some crushed ice into 4 glasses and pour over the margarita. Halve the cucumber slices, coat with the sea salt and place them on the rims of the glasses. Serve immediately.
