Vanilla, ginger and orange cake with coconut yoghurt frosting

Ingredients:

400g sugar

4 large eggs

300g cake flour, sifted

250ml (1 cup) milk

200ml sunflower oil

20ml (4 tsp) baking powder

10ml (2 tsp) vanilla extract

FILLING

2 x 165g cans coconut milk

20ml (4 tsp) cornflour

Knob of ginger, grated

125ml (½ cup) fresh orange juice

30ml (2 tbsp) castor sugar

Grated rind of 1 orange

3ml orange food colouring

FROSTING

300g coconut yoghurt, see recipe under “How To’s”

A tiny drop of orange food colouring
