3 teaspoons paprika, divided
2 cups Arrowhead Mills® Organic Quinoa, cooked
2 teaspoons taco seasoning
2 ripe avocados, peeled, pitted and chopped
1 green onion, thinly sliced
1 tablespoon lime juice
3 – 4 leaves of cilantro, chopped (or 2 teaspoons dried cilantro)
2 cup sliced black olives
2 cups fresh tomatoes, chopped
1 cup vegan cheddar cheese, shredded
