For the CAKE:
2¼ cups flour
2 teaspoons baking soda
½ teaspoon baking powder
3 teaspoons cinnamon
½ teaspoon ground ginger
1½ teaspoons allspice
½ teaspoon nutmeg
1 teaspoon salt
2 cups packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
½ cup whole milk
¾ cup canola oil
2 granny smith apples, peeled and grated
2 honeycrisp apples, peeled and grated
For the apple cider BOURBON CARAMEL:
2 cups sugar
½ cup apple cider
1 tablespoon light corn syrup
1 cup heavy cream
½ cup bourbon
½ teaspoon salt
For the BROWN SUGAR BUTTERCREAM:
4 egg whites
1 cup packed light brown sugar
1 teaspoon vanilla
¼ teaspoon salt
1½ cups (3 sticks) unsalted butter, at room temperature
