Rudolph Mexican hot chocolate cupcakes

These adorable Christmas cupcakes are ridiculously easy and quick to make, and almost too pretty to eat. But they are also way too delicious not to, with their chocolatey taste and the spiciness from cinnamon, nutmeg and chilly powder.

For cupcakes:

20 g cocoa powder
5 tbsp boiling hot water
125 g plain flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
1/4 tsp salt
1/8 tsp chilli powder
1/2 tsp cinnamon
pinch of nutmeg
125 g caster sugar
125 g unsalted butter, softened
2 large eggs

For buttercream:

150 g unsalted butter, softened
250 g icing sugar, divided
1 tbsp milk
50 g cocoa powder
1/2 tsp red food colouring

For decoration:

12 red M&M’s
24 pretzels
24 googly eyes
