Ingredients:

Crust:
2 c. graham cracker crumbs (about 15 sheets)
2 tbsp. granulated sugar
Pinch salt
5 tbsp. butter, melted

Filling:
2 lbs. or (4) 8 oz. blocks plain cream cheese, room temperature
¼ tsp. salt
1 tbsp. vanilla extract
1½ c. granulated sugar
4 eggs, room temperature
⅔ c. sour cream, room temperature
⅔ c. heavy whipping cream, room temperature

Sour cream topping:
1½ c. sour cream
¼ c. powdered sugar
1 tsp. vanilla bean paste
