Peek-A-Boo Easter Eggs

This recipe makes three six-inch eggs. Make two first, and then create a third from the sugar that remains after hollowing out the first two sugar eggs. The recipe for royal icing makes a generous amount; there’s enough to practice piping with it before you get started.

Sugar Eggs
1 tablespoon powdered egg whites
3 tablespoons water
food coloring (if desired)
6 cups granulated sugar
1¼ cups confectioner’s sugar
Royal Icing
4 cups confectioner’s sugar
3 tablespoons powdered egg whites
6 tablespoons water
food coloring
