Paleo Sweet Potato Pie


For the crust:

1 1/4 cup “Paleo Baking Mix” by Bob’s Red Mill
1/8 teaspoon baking soda
1/4 teaspoon fine sea salt
2 tablespoons coconut sugar
10 tablespoons (1 stick plus 2 tablespoons) chilled butter, cut into 1/2-inch cubes
2 eggs
arrowroot four for dusting

For the filling:

3 medium-sized (about 1.5 pounds) sweet potatoes
8 tablespoons (1 stick) butter
3/4 cup coconut sugar
1/2 teaspoon ground nutmeg, additional for garnish
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/4 teaspoon ground ginger
1/4 teaspoon fine sea salt
1 can (13.5 ounces) full-fat coconut milk
3 large eggs
2 teaspoons vanilla extract
