Moist Chai Applesauce Cake

Incredibly moist and sticky applesauce cake spiced with cinnamon, ginger and cardamom. Topped with salted caramel glaze and pecans. Warming, rich and so delicious!

Serves: 16 small squares

Ingredients:

Cake

1 packet chai tea
1 cup water
1 and ½ cup white rice flour
1 and ½ cup almond flour
¼ cup arrowroot
⅓ cup coconut sugar
1 and ½ tsp baking soda
½ tsp baking powder
2 tsp ground cinnamon
1 and ½ tsp ground ginger
1 and ½ tsp ground cardamom
¼ tsp nutmeg
⅛ tsp ground cloves
½ cup coconut oil, melted
⅓ cup maple syrup
¾ cup unsweetened applesauce
1 apple, peeled and cut into very small chunks (golden delicious or russet)

Caramel Glaze

½ cup coconut sugar (or other sugar)
⅓ cup coconut cream
1 tbsp brown rice syrup
1 tsp vanilla
⅛ tsp sea salt
⅛ tsp cinnamon (optional, only for cinnamon lovers)
