Grilled Paneer and Melon Summer Salad

Ingredients:

8oz paneer cheese or halloumi, sliced into 8 pieces
3 cups chopped cantaloupe or honeydew melon

Yogurt Dressing

1/2 cup plain, Greek yogurt
1/2 cup fresh cilantro, finely chopped
1/4 cup fresh mint, finely chopped
1 large clove garlic, grated or minced
1/2 tsp salt, or to taste

Harissa Dressing

1/4 cup oil (avocado or extra virgin work well)
1 tbsp harissa
1/4 cup dried cranberries
1/2 cup chopped walnuts, lightly toasted
juice from 1/2 lemon
1/2 tsp salt
