Creamy Lemon Cheesecake with Vanilla Wafer Crust


Ingredients for the crust:

1 ½ cups Vanilla Wafer crumbs (I used a gluten-free version by Kinnikinnick)
¼ cup plus 1 tablespoon Unsalted Butter, melted
2 tablespoons Granulated Sugar

Ingredients for the filling:

2-8 ounce packages Cream Cheese, room temperature and softened
1 cup Granulated Sugar
1 cup Sour Cream
3 eggs, room temperature
1 teaspoon Vanilla Extract
1 teaspoon Lemon Extract
2 tablespoons Lemon Juice
Zest of 1 Lemon
