Serves 8-10
Ingredients:
For the cookies & cream ice cream
3 cups heavy cream
1 cup whole milk
3/4 cup sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
5 large egg yolks
5-10 chocolate sandwich cookies
For the cake
4 large eggs, separated
3 tablespoons granulated sugar
Heaped 1/8 teaspoon salt
Heaped 1/8 teaspoon cream of tartar
1/3 cup packed dark brown sugar
1 1/2 teaspoons vanilla extract
1 1/2 tablespoons water
1/4 cup dutch-process cocoa, plus more for dusting
1/3 cup cake flour (or 5 tablespoons all-purpose flour plus 1 teaspoon cornstarch)
Heaped 1/2 teaspoon baking powder
2 to 2 1/4 cups slightly softened ice cream of your choice (I used cookies & cream)
Powdered sugar and sprinkles to decorate
