Coconut Easter Eggs


1 14-oz. bag (400 g.) sweetened, shredded coconut
1 ¼ cups (150 g.) confectioners’ sugar, sifted
1 tablespoon (15 ml) whole milk
1 egg white*
½ teaspoon vanilla
1 lb. (454 g.) bittersweet couverture chocolate
Melted white chocolate chips and oil-based food colourings for decorating

Yield: 3 dozen chocolate eggs

* Note: The egg white in the filling is uncooked, so if you are worried about that, you can use pasteurized egg whites instead.
