Chocolate Mousse

Two important tips when you make a chocolate mousse are:
1. Always choose a high quality chocolate. Remember it is the chocolate that makes the mousse…
2. The most important stage is when you combine the whipped egg white with the melted chocolate. First move some of the egg white into the chocolate bowl and mix it gently. Only now add the entire melted chocolate bowl into the bowl with the whipped egg white.

And for the recipe (6 serving):


– 170 g of dark cooking chocolate chips. Try to make sure it contains at least 50% cocoa
– 80 ml of milk
– 4 egg whites
– 1 egg yolk
– 2 spoonful of sugar
