Blueberry Cake with Quark Cream


2 eggs
75 g sugar
pinch of salt
juice from 1/2 squeezed orange (or 2 tbs orange juice)
100 g flour
1 tsp baking powder
400 g smooth quark
200 g plain yogurt
11 gelatin sheets
80 g sugar
1 organic orange
230 g blueberries (fresh or frozen)
350 ml whipping cream
200 g fresh bluberries for decoration
cookie crumbs
orange slice
mint leaves
