Vietnamese Bowl with Pork Meatballs over Rice

Vietnamese Bowl is a deconstructed Banh Mi Sandwich over rice topped with a poached egg. This is an easy recipe using fresh ingredients to maximize flavor!

Ingredients:

Meatballs

1 pound ground pork
1/4 cup bread crumbs
1 large egg
2 tablespoons chopped fresh cilantro
1 tablespoon freshly minced garlic
1/2 tablespoon freshly grated ginger
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper

Rice

2 tablespoons unsalted butter
1 cup Basmati Rice, rinsed until water runs clear
2 cups water
1 tablespoon chicken base
salt & pepper to taste

Sauce

1/2 cup Apple Cider Vinegar
3 tablespoons soy sauce
1 cup brown sugar
3 Serrano Chile Peppers, seeded and minced
1 tablespoon grated ginger
1/2 teaspoon kosher salt (or to taste)

Toppings

Pickled Vegetable Slaw
Finely diced jalapeno for garnish
Chopped cilantro for garnish
4 poached eggs (optional, but totally worth it!)
