Vegan Taco Salad with Lentils

This vegan taco salad is fresh and delicious with a mix of tasty vegetables and hearty, spiced lentils. Easy to prepare and ready in just 15 minutes for a quick weekday lunch or dinner.

Ingredients:

2 large or 4 small flour tortillas, cut into strips
1 small white or yellow onion, diced
2 cloves of garlic, minced
2 cups cooked lentils
2 teaspoons cumin
2 teaspoons oregano
2 teaspoons smoky paprika
1 teaspoon chili powder
1 teaspoon salt
1 head of iceberg lettuce, shredded
3 tomatoes, diced or 15 cherry tomatoes, sliced
1 can black olives, sliced
1 red onion, diced
1 avocado, cubed or sliced
A small bunch of cilantro
1 jar of salsa
4 slices of lime
