Ingredients:

POTATOES

4 large baking potatoes, preferably Russets, scrubbed

5 tablespoons unsalted butter, divided

1 bag (10-ounce) baby spinach

salt and freshly ground black pepper, to taste

4 cloves garlic, minced

1/2 heaping cup freshly grated Parmesan cheese

1/3 cup ranch dressing

1/3 cup half and half

Olive oil for baking dish

CRUMB TOPPING

2 tablespoons butter, softened

1 clove garlic, minced

2 tablespoons freshly grated Parmesan cheese

2 tablespoons panko

salt and freshly ground black pepper, to taste
