Spiced Orange Palmiers

Crisp, caramelised, golden… and not too sweet, these palmiers are perfect. They are ideal for dipping into a hot cup of tea. I highly recommend making them.

Ingredients:

For the detrempe

350 g / 12 oz. plain flour
150 g / 5 oz. water
110 g / 3.5 oz. butter, melted
1 tsp. sea salt

For the beurre maine

310 g / 11 oz. butter
150 g / 5 oz. plain flour

For the spiced orange palmiers

100 g / 3.5 oz. raw sugar, plus extra for sprinkling
Finely grated ring from 1 orange
1 tsp. cardamom
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
20 g / ¾ oz. butter, melted
1 tbsp. fresh orange juice
