Ingredients:

Crust:
1 stick (113g) butter, cut into 1 inch cubes
1 and 1/2 cups all purpose flour
1/4 teaspoon salt
3 tablespoons sugar
1/2 tablespoon cinnamon
3 tablespoons cold water
Filling:
1 cup kefir
1 tablespoon all purpose flour
4 eggs
Topping:
3 persimmons, sliced
2 tablespoons brown sugar
