Mint Chocolate Chip Brownies (Paleo + GF)

½ cup + 2 tablespoons (4.5 oz or 130g) coconut oil
1¼ cups coconut sugar
¾ cups plus 2 tablespoons unsweetened cocoa powder (2.5 oz or 70g)
¼ teaspoon salt
1 teaspoon vanilla extract
2 large eggs
½ cup almond flour (2 oz.)

For the mint cream

¾ cup coconut cream
½ cup fresh spinach
2 tablespoons maple syrup
½ teaspoon mint extract
1 ounce dark chocolate, chopped finely

For the chocolate topping

¼ cup coconut oil
¼ cup cocoa powder
2 tablespoons maple syrup
⅛ teaspoon mint extract
