Mexican salad with meat on nests tortilla

Ingredients:

For the minced meat:

2 tablespoons olive oil
400 g. Ground beef
1 medium onion, chopped
500 grams. slightly concentrated tomato juice
½ teaspoon cumin
½ teaspoon paprika salt pepper

For the salad:

200 grams. mixed salad
200 grams. cherry tomatoes, halved
2 green onions, sliced
1 yellow pepper chopped

8 tortillas with a diameter of 20 cm.
100 grams. cheddar grated
300 grams. yoghurt (or sour cream)
parsley for serving
