Chocolate-Strawberry Thumbprint Cookies

3/4 cup all-purpose flour
¼ cup unsweetened Dutch-process cocoa
¼ teaspoon kosher salt
2 ounce semisweet chocolate, chopped
½ cup (1 stick) unsalted butter (at room temperature )
¼ cup plus 6 ½ teaspoons granulated sugar (divided)
1 large egg yolk
½ teaspoon pure vanilla extract
4 ounce cream cheese (at room temperature )
2 tablespoon confectioners’ sugar
5-6 fresh strawberries (washed, stemmed and finely diced)
