Chocolate souffle

Base:

5 protein, medium-sized
20g caster sugar
Pastry cream (recipe below)
soft butter and fine sugar to grease molds

chocolate confectionery cream:

175ml milk
40g caster sugar
2 egg yolks, a medium-sized
15g plain flour
25g cocoa bitterness, screened
120g dark chocolate, chopped

additives to provide:

vanilla ice cream
chocolate sauce
powdered sugar
