Bolo de cenoura – Brazilian carrot cake – with brigadeiros

Ingredients:

Brigadeiros (makes 70)

2 395 g tins sweetened condensed milk
60 g salted butter
30 ml cream
90 g dark chocolate
2 tbsp cocoa sifted
150 g chocolate sprinkles

Bolo de cenoura

380 g carrots (about 2), roughly chopped or grated
100 g butter melted
3 eggs
350 g plain flour
2 tbsp baking powder
230 g caster sugar
40 g cacao nibs

Chocolate glaze

4 tbsp cocoa
8 tbsp icing sugar
30 ml milk (2 tbsp)
