Belt Sandwich, recipe adapted from Tartine and Apron Strings



Ingredients:

– sourdough bread, sliced and toasted
– pesto mayo
– arugula
– tomato, sliced
– bacon, cooked
– fried egg
– mozzarella cheese, shredded
– pepper, to season

– Preheat oven to broil.
– To assemble the sandwich, spread each piece of toasted sourdough with the pesto mayo, place arugula on the bottom piece of the bread. Add the sliced tomato, bacon (amount desired) and fried egg on top of that. Place the top piece of bread on top and layer it with mozzarella cheese and season with pepper.
– Place in the oven and cook until the cheese is melted and lightly browned.
